Homemade crackers and apricot jam

At Vivaï, we love small bites. Serve these crackers with hummus, homemade apricot jam or cheese. Let your imagination run wild, the possibilities are endless.

Homemade crackers and apricot jam

  • Servings : 36 crackers/ 1 cup of compote
  • Preparation : 45 minutes
  • Cooking : 75 minutes

Ingredients

For the crackers

  • 500ml (2 cups) all-purpose flour
  • 375ml (1 ½ cups) sharp cheddar cheese, grated
  • 2 eggs
  • 45ml (3tbsp) vegetable oil
  • 45ml (3tbsp) water
  • 30ml (2 tbsp) flax seeds, ground
  • 2.5ml (1/2 tsp) salt
  • 2.5ml (1/2 teaspoon) pepper, ground

For the apricot jam

  • 180ml (3/4 cup) dried apricots
  • 80ml (1/4 cup) granulated white sugar
  • 180ml (3/4 cup) water
  • 2 sprigs of rosemary, fresh

Methods

For the crackers

  1. Combine all the “For the crackers” ingredients with a wooden spoon.
  2. Knead the dough for 3-4 minutes, then shape into a ball.
  3. Cover the dough ball with plastic wrap and let stand at room temperature for 15 minutes.
  4. Meanwhile, cover a baking sheet with parchment paper and preheat the oven to 350F. Start with the apricot jam (see below).
  5. Roll out cracker dough to about 1/8 inch thick on a floured surface.
  6. Using a cookie cutter, cut shapes from the dough and place on cookie sheet.
  7. Bake for 15 minutes, then grill on BROIL for 2 minutes. Let cool.

For the apricot jam

  1. In a small pot, add the apricots, sugar, water and rosemary.
  2. Cook over low heat for 1 hour.
  3. Let cool completely, remove the sprigs of rosemary then use a mixer to reduce to a jam.
  4. Serve with ½ to 1 tsp jam on each cracker or let each guest help themselves.
