Coconut and fruit muffins

This recipe is excellent as an everyday snack or to replenish your energy during an outdoors activity. The fruity flavour will charm you right away!

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup of white sugar
  • ¾ cup unsweetened coconut, grated
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • 1 ¼ cup buttermilk
  • 2 eggs
  • ¼ cup canola oil
  • 1 tsp vanilla
  • ½ cup of dried cranberries
  • ½ cup dried pineapple, chopped

Methods

  1. Preheat the oven to 400 F.
  2. Place paper or silicone cups in the muffin cups.
  3. In a large bowl, whisk together the flour, sugar, coconut, baking powder, baking soda, cinnamon and salt.
  4. In a second bowl, combine the buttermilk, eggs, oil and vanilla.
  5. Add the wet mixture to the dry ingredients and mix a little to moisten slightly.
  6. Add the cranberries and pineapples to the mixture.
  7. Divide mixture into muffin cups and bake for 25 minutes, or until a toothpick inserted into a muffin comes out dry.
